Origin Lab Coffee & Matcha Review: Matcha Without the Sugar

The pink drink in that photo is not sweet. Not the way you’re bracing for, anyway. San Francisco’s matcha scene has been drifting toward dessert for a couple of years now (strawberry syrup, condensed milk, cream caps you could stand a spoon in), and I say that as someone who ranks the treat tier of my Matcha Snob Scale with love. Origin Lab Coffee & Matcha on Sutter Street went the other direction.
Origin Lab Coffee & Matcha is a specialty coffee and ceremonial-grade matcha cafe at 211 Sutter St in San Francisco’s Union Square, and it leaves the sugar out of its drinks by default. The faint sweetness in the cloud foam comes from honey, and if you want more you ask for it and pay 75 cents (The Infatuation confirmed the policy, and I love it). The shop opened in 2025, runs 6am to 8pm every day, and splits its menu evenly between coffee and matcha. The room is a green-walled lab of pour-over gear, coffee bags, a copy of The World Atlas of Coffee, and a basket of citrus on the shelf.
What to Order at Origin Lab
We got the Yuzu Air Matcha Cloud ($8.25), a matcha latte finished with a light yuzu foam, and the Sparkling Strawberry Nimbus ($7.75), which is sparkling lime water under an airy strawberry cloud with freeze-dried strawberry scattered on top. That’s the pink one. I really liked both, and what I liked most is the restraint: the matcha gets to taste like matcha, the strawberry gets to taste like strawberry, and nobody at the counter is trying to sell you a milkshake with a tea leaf in it. We also grabbed a danish ($4.75).
Here’s my one note, and it’s a me problem: as they came, both drinks landed a notch under my personal sweet spot. I like my matcha a touch sweeter than a purist would (this is well documented on this blog). The fix is easy, because you can customize the sweetness when you order, so if you’re a treat-tier person, say so at the counter. If you’re a purist, order it exactly as written. This one’s for you.
The coffee half of the menu (rotating single-origin espresso, roasted in the Bay Area) is untested by me, because I’m back on a coffee break and the matcha half is where I live anyway. And a scheduling note straight from the receipts: we paid here at 11:25am and were standing in the Aji Kiji sushi line around the corner on Kearny by 11:47. Downtown lunch, solved.

- My order: The Yuzu Air Matcha Cloud and the Sparkling Strawberry Nimbus (ask for them sweeter if you’re treat-tier)
